Brisket is mostly connective tissue, and smoking it is a long, slow conversion of that collagen into gelatin. That conversion is what turns a tough cut tender, and it happens over hours at temperatures well above the point at which the meat is merely cooked. This is why brisket cannot be rushed and why a thermometer alone will not tell you when it is ready.

Rules of thumb give roughly one to one and a half hours per pound at 110 °C, less at 120 °C — but they are unreliable, because the stall makes the timeline erratic. Plan generously, start early, and treat a finished-too-soon brisket as a solved problem: it holds for hours wrapped and insulated, while one that is not ready when guests arrive cannot be hurried.

The stall, and what it actually is

Somewhere around 65–75 °C internal, brisket stops climbing and can sit at the same temperature for hours. This is evaporative cooling: moisture leaving the surface takes heat with it at almost exactly the rate the smoker delivers it, so the meat holds an equilibrium[1]. It is not a fault, and turning up the heat mostly just dries the surface faster.

The stall is why the hours-per-pound rules are so unreliable. Two briskets of identical weight can differ by hours depending on humidity, airflow and how much surface fat is exposed.

Wrapping, and what it costs

Wrapping in foil or butcher paper stops evaporation and pushes the brisket through the stall much faster. Foil is the more effective and also the most damaging to bark, since it traps steam against the crust; butcher paper breathes a little and preserves more texture.

Not wrapping at all gives the best bark and the longest cook. There is no correct answer — it is a trade between bark and time, and it is worth deciding before you start rather than at hour eight.

Done is a feel, not a number

Most briskets finish somewhere between 93 and 96 °C internal, but the number is a guide. What you are actually looking for is a probe sliding into the thickest part with almost no resistance, like pushing into soft butter.

That is why two briskets can be done at different temperatures. Collagen conversion depends on time at temperature as much as final temperature, so a brisket that spent longer getting there finishes tender at a lower reading.
