Pour over is percolation: water passes through the coffee bed and drains away, rather than sitting in it. That makes total brew time a result as much as an input — it depends on grind, bed depth and how you pour. The Specialty Coffee Association specifies the measurable parts: about 55 g of coffee per litre of water, water at 92–96 °C, and an extraction yield of 18–22%[1].
For a single-cup cone, total time from the first drop of water to the last drip is commonly two and a half to three and a half minutes. That figure is a diagnostic rather than a target. If your brew drains in ninety seconds you are almost certainly grinding too coarse and under-extracting; if it takes five minutes the grind is too fine and the bed has choked. In both cases the grind is the fix, not the pour.
The bloom
Fresh coffee releases carbon dioxide when it first meets water. That gas pushes water away from the grounds and makes extraction uneven, so the first pour — roughly two to three times the coffee's weight in water — is there to let it escape. Thirty to forty-five seconds is the usual allowance.
Very fresh coffee blooms vigorously and may want the longer end; coffee a few weeks past roast barely blooms at all and does not need the wait. If you see almost no bubbling, your beans are old, and no amount of technique will fix that.
Pulse pours versus one continuous pour
Pouring in stages keeps the bed at a more consistent depth and gives you control over total time. A common pattern is the bloom, then two or three further pours at roughly even intervals, each finishing before the bed runs dry.
A single continuous pour is simpler and works, but it front-loads the water and tends to run faster. Neither is correct in the abstract — what matters is that you do the same thing each time, so that when you change the grind you can actually tell what the grind did.
Ratio and temperature follow the SCA brewing standard[1]. The stage timings are a widely used convention, not a standard, and total time is a diagnostic rather than a target.

- Draining much faster than 2:30 usually means the grind is too coarse; much slower than 3:30 means too fine.
- For 15 g of coffee, total water is about 250 g at the SCA ratio.
