An espresso shot is timed from the moment the pump starts to the moment you stop it. The widely used window is 25 to 30 seconds to reach a 1:2 ratio — 18 g of dry coffee yielding about 36 g of liquid espresso. That window is industry convention rather than a published standard, and it exists because it is where grind, dose and pressure tend to land in balance on typical equipment.
Time on its own means nothing; time paired with a weight does. A 20-second shot that reaches 36 g and a 35-second shot that reaches the same 36 g are different extractions from the same dose, and they taste it. Weigh the liquid out as well as the dry coffee in, and read the two numbers together — the clock alone will mislead you.
What the shot time is telling you
Espresso is the most grind-sensitive brew method there is, because the water is forced through under pressure and small changes in particle size change resistance sharply. A shot that reaches its target weight too quickly means water found too easy a path: grind finer. One that takes too long means the puck is choking: grind coarser.
Adjust the grinder in small steps and pull a fresh shot after each. Changing dose and grind at the same time is the usual reason people spend a morning on a bag of coffee and end up nowhere.
Freshly roasted coffee moves
Beans within a few days of roast carry a lot of carbon dioxide, which makes shots run faster and less predictably. Most espresso settles somewhere between roughly one and three weeks after roast, and the grind setting that worked on day three will usually be wrong on day ten.
This is normal, not a fault in the coffee. It does mean that dialling in is something you repeat as a bag ages, rather than solving once.
