A pizza stone works by storing heat and dumping it into the base of the pizza faster than air ever could. That stored heat is the entire point, and it is why the oven's thermostat is not a useful signal: the oven reaches its set temperature in ten or fifteen minutes, while the stone inside it is still far cooler and will stay that way for a long time.
Forty-five to sixty minutes at maximum temperature is the usual allowance, and the reason is thermal mass. A dense ceramic or cordierite stone absorbs a great deal of energy before its own temperature rises, so it lags the oven air badly. Pull a pizza onto an under-heated stone and the base stays pale and soft while the top finishes — the classic symptom, and one that no amount of extra bake time fixes.
Steel heats faster and transfers harder
Steel conducts heat far better than ceramic, so it both comes up to temperature sooner and delivers its stored heat into the dough much more aggressively. Around 45 minutes is usually enough for a steel where a thick stone wants a full hour.
That aggression cuts both ways: a steel can scorch a base in the time a stone would merely crisp it. If you switch from stone to steel, expect to take the pizza out earlier rather than assuming the recipe still applies.
Position matters as much as time
Put the stone on an upper rack rather than the floor of the oven. Close to the roof, the pizza gets radiant heat from above at the same time as conducted heat from below, which is what browns the top before the base overcooks.
Leave the stone in place while the oven heats, and leave it there afterwards to cool. Moving hot stone risks cracking it, and thermal shock — a cold topping or a splash of water on hot ceramic — is the usual cause of a stone splitting.
