Chicken wings have a lot of fat and connective tissue under the skin, and crisp skin depends on rendering that fat out before the surface browns. Cooking hot from the start browns the skin while the fat beneath is still soft, which is why wings straight into a very hot air fryer come out coloured but flabby.

A two-stage cook fixes it. Fourteen minutes or so at a moderate 160–170 °C renders fat and cooks the meat through; ten more at 200 °C drives off surface moisture and crisps the skin. The split matters more than the exact minutes, and the second stage is where you watch, since the difference between crisp and burnt is a couple of minutes at that temperature. Wings are done when the meat reaches 74 °C at the bone, whatever the skin looks like[1].

Dry skin browns; wet skin steams

Pat wings thoroughly dry before they go in. Surface water has to boil off before browning can start, and on a crowded basket that water has nowhere to go — it becomes steam that keeps every other wing soft too.

Some recipes toss wings in a little baking powder, which raises the surface pH and helps browning. It works, but use baking powder rather than baking soda, and use it sparingly: too much leaves a distinctly metallic taste that no sauce covers.

Sauce after, never before

Wet sauce applied before cooking prevents the skin drying, so it never crisps — you end up with soft wings in baked-on sauce. Toss the wings in sauce after they come out, while they are still hot enough to take it.

Dry rubs are the exception and can go on beforehand, though anything with much sugar in it will darken fast during the high-temperature stage. If your rub is sweet, keep the second stage shorter and watch it.

Times are guidance and vary with your machine and how full the basket is. The internal temperature is not guidance[1].
