Deep frying cooks by immersion in hot oil, which transfers heat far faster than air or water. Done properly the food's own moisture turns to steam and pushes outward, keeping oil out; done at too low a temperature that pressure is too weak and the food absorbs oil instead. Greasy fried food is nearly always a temperature problem rather than an oil problem.

Times are short and depend heavily on thickness, so the numbers below are guidance. What matters more is holding the oil temperature, and the enemy of that is batch size. Cold food dropped into oil pulls the temperature down sharply — a large batch can drop it by 30 °C or more, and it does not recover until the food is nearly cooked. Fry in small batches and let the oil come back up between them.

Smoke point decides the oil

Oil breaks down above its smoke point, producing acrid flavours and irritating fumes. Refined oils generally have higher smoke points than unrefined ones, because the compounds that burn first have been removed — which is why refined sunflower or peanut oil suits frying and unfiltered extra virgin olive oil does not[1].

Smoke point also drops as oil is used, since frying introduces exactly the kinds of compounds that lower it. Oil that smokes at a temperature it handled last week has aged, and it is time to replace it.

Safety, briefly but seriously

Never fill a pan more than a third to halfway with oil — it rises sharply when food goes in. Never put wet food into hot oil, and never anything frozen with ice on it: water flashes to steam instantly and ejects oil violently.

An oil fire must never be doused with water, which will spread it explosively. Cut the heat and cover the pan to smother it, and keep a lid within reach before you start rather than looking for one during.
