Sugar stages are defined by temperature, not by time. As a syrup boils, water evaporates and the sugar concentration rises, and each named stage — thread, soft ball, firm ball, hard ball, soft crack, hard crack — corresponds to a specific concentration and therefore a specific boiling point[1]. What sets the stage is how hot the syrup is, and nothing else.
So a timer cannot tell you when you have arrived. What it is genuinely useful for is the opposite problem: the stages arrive slowly at first and then very fast, because the last of the water leaves quickly. The gap between soft crack and hard crack can be under a minute, and burnt sugar follows shortly after. Use the timer to remind you to start watching closely, and a thermometer to tell you when to stop.
The cold water test
Before thermometers, cooks judged stages by dropping a little syrup into cold water and feeling what it formed. It still works, and it is a useful check on a thermometer you do not trust. A drop that forms a soft, squashable ball is soft ball; one that forms a firm ball that holds its shape is firm ball; one that separates into hard, brittle threads is hard crack.
The names describe exactly what you feel, which is why they have survived. If your thermometer and the water test disagree, calibrate the thermometer in boiling water before trusting it further.
Altitude shifts every number
Because the stages are boiling points, they move with atmospheric pressure just as water's does. At altitude every stage arrives at a lower reading, and following a sea-level recipe produces syrup that is more concentrated than intended — fudge that sets like glass, caramel that turns brittle.
The usual correction is to subtract about 0.5 °C from each target for every 150 m above sea level. Check your own boiling point of water first: whatever it falls short of 100 °C is the same amount to subtract throughout.
