Caramelisation begins once a sugar syrup passes the hard crack stage and the sugar itself starts breaking down — roughly from 160 °C upward. Colour and flavour develop together from there: pale gold, amber, deep copper, then acrid and black. The whole usable range spans about twenty degrees[1], which is why caramel has a reputation for going wrong.
The clock is not what you are watching, but it is worth knowing how little of it you have. Once colour appears, the transition from pale amber to too dark commonly takes well under a minute, and the pan keeps cooking after you take it off the heat. That residual heat is the reason experienced cooks pull caramel a shade lighter than they want and have the next ingredient ready before they start.
Wet versus dry
A wet caramel dissolves the sugar in water first and boils the water off. It is slower and more forgiving, because the syrup heats evenly and you have longer to read the colour. The risk is crystallisation, which is why recipes tell you not to stir and often to brush the pan sides with water.
A dry caramel melts sugar alone in the pan. It is faster and gives a deeper flavour, but it heats unevenly — edges colour while the middle is still granular — and it demands attention from the first moment. Neither is the correct method; the dry one is simply less forgiving of a distraction.
Stopping it
Removing the pan from the heat does not stop caramelisation, because the pan and the sugar are both still very hot. To actually arrest it you have to add something: cream for a sauce, butter, or a controlled splash of water.
Whatever goes in will erupt violently — hot caramel is far above the boiling point of water. Warm the cream first, add it off the heat, stand back, and use a pan much larger than the volume suggests. This is the step where people get burnt.
Approximate; the usable range spans roughly twenty degrees and colour is the more practical guide[1]. Assume the pan carries several degrees further after you remove it.

- Pull one shade lighter than you want — residual pan heat carries it further.
- Adding cream or water to hot caramel erupts violently. Warm the cream, add off the heat, use an oversized pan.
